Restaurant Vår is located at the friendly address Vintapperstræde 10, and is one of Odense's absolute gourmet restaurants. Spring owner and odeneaner Jacob Burmølle-Jensen calls Spring "a small and intimate restaurant", and focuses on dinner in the restaurant's four weekly opening days. Our vision is gourmet food that focuses on sustainability and the individual raw materials. The atmosphere in the restaurant is cozy and intimate, and there is a focus on sustainable food of a very high quality.
On the menu, there is quality fish such as beach crab, scallop, white fish and cod, which come from suppliers who have sustainability as a key issue. In addition, there are various vegetables such as beetroot, carrots, potatoes, ram onions, fennel and deciduous roots among many other things. These vegetables and spring meat also come from local farms on Funen, which are cultivated either biodynamically or ecologically. In general, one can say that Restaurant Vår focuses on Nordic cuisine, where each raw material is hand-selected, which ensures an overriding quality of the food and the many dishes and its compositions.
At Restaurant Vår you get Nordic food of gourmet quality in an intimate setting, while you can enjoy fantastic Vår carefully selected natural wines. You can at Our only eat evening menu, and their dishes are stuck on either 5 courses per night. nose or 10 small and exclusive dishes. Therefore you must eat at Spring for a unique experience, you do not get many places in Odense. The concept at restaurant Vår is simple, but at the same time there is a lot of quality and hours in the preparation of the many small dishes. They are therefore carefully selected, focusing on the individual commodities where they come from and their sustainability.
The owner Jacob Burmølle-Jensen has a long background with high professionalism behind him, and has among other things. been chef at restaurant Naert in Copenhagen. Since then, Jacob Burmølle-Jensen has chosen to settle in his home town of Odense, because he feels that Odense has been through a huge transformation and now gives him a feeling of being a big city. Therefore, the owner wanted to invest in opening a restaurant in Odense, because the time was now ripe.
The prices at Restaurant Vår are at the higher end, as it is a gourmet restaurant. At Spring you can get 5 dishes for 550 DKK and 10 dishes for a price of 850 kr. For that money you ensure a sustainable food experience of high quality.
If you want to eat at Restaurant Vår, it is a great idea to book a table. Our promotion promotes itself in their small and intimate setting, and therefore there are only 20 dining places in the restaurant to keep the intimate atmosphere and the exclusive level.
In addition, in 2018 and 2019 there was talk and speculation about the Michelin guide coming past the restaurant Vår in Odense, but this time (2019) they had to wait for them. So the level is there and it could easily become a reality in the coming years. In addition, the restaurant Vår has been voted one of the most well-known restaurants in Odense, and is called eg. for Odense's "top restaurant".
