Sticks n 'Sushi is a Japanese sushi restaurant with Danish roots. The first Sticks n 'Sushi restaurant opened in Copenhagen in 1994, and was one of the first restaurants in Copenhagen specializing in sushi. In 1996, they opened for the first time for takeaway, combining restaurants and takeaway in the same premises, which is a concept they still run with to this day. Today, there are over 1,000 employees in their restaurants, both in Copenhagen, UK and Berlin. The founder of Sticks n 'Sushi was Jens Rahbek Hansen, Thor Andersen and Kim Rahbek Andersen, who are today called the sushi kings, as their restaurant has become international today and that they were some of the first to start a sushi restaurant in Copenhagen. The idea for the restaurant came from Jens, who had returned home after 6 years of cookery in Japan, which was also the brothers' home country, Jens and Kim. Jens and Kim had been served sushi from childhood, and chose to team up with their brother-in-law Thor, after which they started developing their idea of a Japanese restaurant in Copenhagen, serving both sushi and yakitori, are small grilled skewers. From that came the natural name: Sticks n 'Sushi. The concept of these two should prove to be successful: sushi came from the imperial kitchen, and yakitoristic sticks from the Japanese street kitchen. This combination proved to be extremely popular especially to this day.

The concept for the restaurants has always been that the food must be the same in all their restaurants, but that the design and experience vary from place to place.
