Reinwald's got hold of two bears after bear hunt started in late August, they have been sent to Copenhagen in fresh state and has now hung to ripen for about 1 month and is ready to be served. The brown bears weigh between 70-250 kg. and the price of the coveted bears roast approaching thousand crowns per kilo. Bear meat comes from the brown bear (Ursus Arctos) and is regarded by many as one of the best game. The bears lived for many years in many parts of Europe but now live only in greatly reduced numbers in particular Sweden and Finland, where they are protected and therefore only shooting when myndighe¬derne estimates, the stock has become too great. The gunshots are very few bears a year, and when bear hunting takes place during special rituals, and then kept a particularly rich hunting dinner, it is extremely difficult to share in this bear meat here in Denmark. Reinwald's chef Jeanette Uth Olsen cook bear meat from some of the things that the bear feed on, such as berries, roots, fish and mushrooms and served either as the great Wild Bears menu or a la carte dishes for example.
